Ingredients
  • 1 cup • quinoa, rinsed
  • 1 1/2 cups • water or vegetable broth
  • 1 cup • cherry tomatoes, halved

  • 1/2 cup • crumbled feta cheese
  • 1/4 cup • fresh parsley, chopped

Instructions
  1. Cook the Quinoa: In a medium saucepan, bring the water or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is cooked and water is absorbed. Remove from heat and let cool.

  3. Make the Lemon Vinaigrette: In a small bowl, whisk together lemon juice, extra virgin olive oil, salt, and black pepper.
