Ingredients
  • 1 bunch • kale, stems removed and leaves chopped
  • 1/2 cup • dried cranberries
  • 1/2 cup • walnuts, toasted and chopped
  • 1/4 cup • grated Parmesan cheese
  • • Lemon-tahini dressing (recipe below)
  • Lemon-Tahini Dressing:
  • 1/4 cup • tahini
  • 1/4 cup • freshly squeezed lemon juice
  • 2 tablespoons • olive oil
  • 1 • garlic clove, minced
  • 1 tablespoon • honey or maple syrup
  • • Salt and black pepper to taste
  • • Water (as needed to thin out the dressing)
Instructions
  1. Prepare the Dressing: In a small bowl, whisk together tahini, lemon juice, olive oil, minced garlic, honey or maple syrup, salt, and black pepper until smooth. Add water gradually to thin out the dressing to your desired consistency. Set aside.
  2. Assemble the Salad: In a large bowl, massage the chopped kale with a little olive oil and a pinch of salt for a few minutes until kale is tenderized.
  3. Combine Ingredients: Add dried cranberries, toasted chopped walnuts, and grated Parmesan cheese to the kale.
  4. Serve: Drizzle the lemon-tahini dressing over the salad and toss gently to coat. Serve immediately, or let it sit for 10-15 minutes to allow flavors to meld.
