Preheat the oven to 375°F (190°C).

Cook the lasagna noodles according to package instructions. Drain and set aside.

Heat the olive oil in a large skillet over medium heat.

Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.

Stir in the mushrooms, zucchini, bell pepper, and spinach. Cook for another 5 minutes, until the vegetables are tender.

Season with salt and pepper to taste. Remove from heat and set aside.

In a large bowl, combine the ricotta cheese and beaten egg. Season with salt and pepper to taste.

Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

Layer with lasagna noodles, vegetable mixture, ricotta mixture, marinara sauce, shredded mozzarella, and grated Parmesan. Repeat layers, ending with marinara sauce and a final layer of mozzarella and Parmesan cheese.

Cover the dish with foil and bake for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
