Ingredients
  • 4 large • russet potatoes
  • 2 tablespoons • olive oil
  • • Salt and pepper, to taste
  • 1 cup • shredded cheddar cheese
  • 4 slices • cooked bacon, crumbled
  • 1/2 cup • sour cream
  • 2 • green onions, sliced
Instructions
  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Scrub the potatoes clean and pat dry. Pierce each potato several times with a fork.
  3. 3. Rub the potatoes with olive oil, salt, and pepper.
  4. 4. Place the potatoes on a baking sheet and bake for about 45-60 minutes, until tender.
  5. 5. Allow the potatoes to cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4-inch of potato on the skin.
  6. 6. Brush the insides of the potato skins with olive oil and season with salt and pepper.
  7. 7. Place the skins cut-side up on a baking sheet and bake for 10 minutes until crispy.
