Ingredients
  • 2 ripe • mangoes, peeled and julienned
  • 1 • red bell pepper, thinly sliced
  • 1/2 • red onion, thinly sliced
  • 1/4 cup • fresh cilantro leaves, chopped
  • 1/4 cup • roasted peanuts, chopped
  • • Thai chili-lime dressing (recipe below)
  • Thai Chili-Lime Dressing:
  • 3 tablespoons • fish sauce
  • 2 tablespoons • freshly squeezed lime juice
  • 1 tablespoon • brown sugar
  • 1 • garlic clove, minced
  • 1 • Thai red chili, finely chopped (adjust to taste)
  • 1 tablespoon • vegetable oil
Instructions
  1. Prepare the Dressing: In a small bowl, whisk together fish sauce, lime juice, brown sugar, minced garlic, chopped Thai red chili, and vegetable oil until well combined. Set aside.
  2. Assemble the Salad: In a large bowl, combine julienned mangoes, sliced red bell pepper, sliced red onion, and chopped cilantro leaves.
  3. Serve: Drizzle the Thai chili-lime dressing over the salad and toss gently to coat. Sprinkle chopped roasted peanuts on top. Serve immediately and enjoy!
