Ingredients
  • 6 large • egg yolks
  • 3/4 cup • sugar
  • 1 cup • mascarpone cheese
  • 1 3/4 cups • heavy cream
  • 2 cups • strong brewed coffee, cooled
  • 1/4 cup • rum or coffee liqueur (optional)
  • 2 packages • ladyfingers
  • • Unsweetened cocoa powder, for dusting
Instructions
  1. Prepare Cream: In a large bowl, whisk together egg yolks and sugar until thick and pale. Add mascarpone cheese and mix until smooth.

  2. Whip Cream: In another bowl, whip heavy cream until stiff peaks form. Gently fold into mascarpone mixture.

  3. Dip Ladyfingers: Combine coffee and rum in a shallow dish. Dip each ladyfinger briefly in the coffee mixture and place in a single layer in a 9x13 inch dish.

  4. Layer: Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.

  5. Chill and Serve: Cover and refrigerate for at least 4 hours, preferably overnight. Dust with cocoa powder before serving.
