  • 1 cup • mushrooms, sliced (such as straw mushrooms or button mushrooms)
  • 2 tablespoons • fish sauce
  • 1 tablespoon • soy sauce
  • 1 tablespoon • brown sugar
  • 2 tablespoons • lime juice
  • 2 • red bird's eye chilies, sliced (optional for heat)
  • • Fresh cilantro leaves, chopped (for garnish)
  • • Thinly sliced green onions (for garnish)
Instructions
  1. In a large pot, combine chicken broth, coconut milk, lemongrass, and galangal or ginger. Bring to a simmer over medium heat.
  2. Add thinly sliced chicken breasts to the simmering broth. Cook for 5-7 minutes until chicken is cooked through.
  3. Stir in sliced mushrooms, fish sauce, soy sauce, brown sugar, lime juice, and sliced bird's eye chilies (if using). Simmer for another 2-3 minutes.
  4. Taste and adjust seasoning with more fish sauce, soy sauce, or lime juice if needed.
  5. Remove lemongrass stalks and galangal or ginger slices from the soup.
