Ingredients
  • 4 medium • zucchinis, halved lengthwise
  • 1 cup • cooked quinoa
  • 1 cup • cherry tomatoes, quartered
  • 1/2 cup • bell pepper, diced
  • 1/4 cup • red onion, finely chopped
  • 1 clove • garlic, minced
  • 1/2 cup • shredded mozzarella cheese
  • 1/4 cup • grated Parmesan cheese
  • 1 tbsp • olive oil
  • • Salt and pepper to taste
  • • Fresh parsley for garnish
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Scoop out the centers of the zucchini halves, leaving about 1/4-inch thick shells. Chop the scooped-out flesh and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped zucchini flesh, cherry tomatoes, bell pepper, red onion, and garlic. Sauté until the vegetables are tender, about 5 minutes.
  4. Stir in the cooked quinoa and season with salt and pepper.
  5. Place the zucchini halves in a baking dish and fill each with the quinoa mixture.
  6. Sprinkle the shredded mozzarella and Parmesan cheese on top.
  7. Bake for 20-25 minutes, until the zucchini is tender and the cheese is melted and golden.
  8. Garnish with fresh parsley before serving.
