Ingredients
  • 2 tbsp • vegetable oil
  • 1 large • onion, diced
  • 3 cloves • garlic, minced
  • 1 tbsp • ginger, minced
  • 2 tbsp • curry powder
  • 1 tsp • ground cumin
  • 1 tsp • ground coriander
  • 1/2 tsp • turmeric
  • 1/2 tsp • cayenne pepper (optional)
  • 1 can • diced tomatoes (14 oz)
  • 1 can • coconut milk (14 oz)
  • 2 cups • vegetable broth
  • 2 large • carrots, sliced
  • 1 large • potato, diced
  • 1 • bell pepper, diced
  • 1 cup • cauliflower florets
  • 1 cup • 1 green beans, cut into 1-inch pieces
  • • Salt and pepper to taste
  • • Fresh cilantro for garnish
Instructions
  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic and ginger and cook for another minute.
  4. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper. Cook for 2 minutes, stirring constantly.
  5. Pour in the diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer.
  6. Add the carrots, potato, bell pepper, cauliflower, and green beans. Stir to combine.
  7. Season with salt and pepper to taste.
  8. Cover and simmer for 25-30 minutes, or until the vegetables are tender.
  9. Garnish with fresh cilantro before serving.
