  • 1 lb • linguine
  • 1 lb • large shrimp, peeled and deveined
  • 4 tbsp • unsalted butter
  • 2 tbsp • olive oil
  • 4 cloves • garlic, minced
  • 1/4 tsp • red pepper flakes (optional)
  • 1/2 cup • dry white wine
  • 1 of • Juice lemon
  • 1 of • Zest lemon
  • • Salt and pepper to taste
  • 1/4 cup • chopped fresh parsley
  • • Lemon wedges, for serving
Instructions
  1. Cook the Pasta: Cook the linguine in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Prepare the Shrimp: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted. Add the minced garlic and red pepper flakes (if using), and cook for about 1 minute, until fragrant.
  3. Cook the Shrimp: Add the shrimp to the skillet in a single layer. Cook for about 2 minutes on each side, until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Make the Sauce: Pour the white wine into the skillet and bring to a simmer. Cook for about 2-3 minutes, until the wine has reduced by half. Stir in the lemon juice and lemon zest, then add the remaining 2 tablespoons of butter and stir until melted and combined.
  5. Combine and Serve: Return the cooked shrimp to the skillet, and add the drained linguine. Toss everything together to coat the pasta in the sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency. Season with salt and pepper to taste, and stir in the chopped fresh parsley. Serve immediately, garnished with lemon wedges.
