  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Cook until vegetables are softened, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in dried split peas, chicken or vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until split peas are soft and soup has thickened. If using, add diced ham or bacon during the last 30 minutes of cooking.
  5. Remove bay leaf from the pot.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer a portion of the soup to a blender and blend until smooth, then return to the pot.
  7. Taste and adjust seasoning with salt and pepper if needed.
