Ingredients
  • 4 • salmon fillets
  • • Salt and pepper, to taste
  • 1 tablespoon • olive oil
  • 1/4 cup • soy sauce
  • 1/4 cup • mirin (Japanese sweet rice wine)
  • 1/4 cup • sake (Japanese rice wine)
  • 2 tablespoons • sugar
  • 1 clove • garlic, minced
  • 1 tablespoon • fresh ginger, minced
  • 1 tablespoon • cornstarch (optional, for thickening)
  • 1 tablespoon • water (optional, for thickening)
  • • Sesame seeds and chopped green onions, for garnish
Instructions
  1. Season the Salmon: Lightly season the salmon fillets with salt and pepper.
  2. Make the Teriyaki Sauce: In a small saucepan, combine the soy sauce, mirin, sake, sugar, garlic, and ginger. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves. If you prefer a thicker sauce, mix the cornstarch and water in a small bowl, then add to the saucepan. Cook for an additional 1-2 minutes, until thickened. Remove from heat and set aside.
  3. Cook the Salmon: Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 3-4 minutes. Flip the salmon and cook for another 2-3 minutes, until the salmon is cooked through and the flesh flakes easily with a fork.
  4. Glaze and Serve: Brush the salmon fillets with the teriyaki sauce. Serve with steamed rice and garnish with sesame seeds and chopped green onions.
