Ingredients
  • 2 tbsp • vegetable oil
  • 1 • onion, sliced
  • 2 • bell peppers, sliced
  • 1 cup • broccoli florets
  • 1 cup • snap peas
  • 2 • carrots, julienned
  • 2 cloves • garlic, minced
  • 1 tbsp • fresh ginger, minced
  • 1/4 cup • soy sauce
  • 2 tbsp • hoisin sauce (optional)
  • 1 tbsp • 1 cornstarch mixed with 1/4 cup water (for thickening)
  • • Cooked rice, for serving
Instructions
  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add onion, bell peppers, broccoli, snap peas, and carrots. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  3. Add garlic and ginger and cook for another minute.
  4. Stir in soy sauce and hoisin sauce, if using. Add the cornstarch mixture and cook for another 1-2 minutes until the sauce thickens.
  5. Serve the stir-fry over cooked rice.
