Ingredients
  • 12 oz • trofie pasta (or another short pasta like fusilli)
  • 2 cups • fresh basil leaves
  • 1/2 cup • grated Parmesan cheese
  • 1/4 cup • pine nuts
  • 2 cloves • garlic
  • 1/2 cup • olive oil
  • • Salt to taste
  • 1/4 cup • grated Pecorino Romano cheese (optional)
Instructions
  1. Make the Pesto: In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped. With the food processor running, slowly add the olive oil until the mixture is smooth. Season with salt to taste.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the trofie pasta until al dente. Reserve 1/2 cup of pasta water and drain the pasta.
  3. Combine and Serve: In a large bowl, toss the cooked pasta with the pesto sauce. Add some of the reserved pasta water if needed to reach the desired consistency. Serve with additional grated Pecorino Romano cheese if desired.
