  • 3 cloves • garlic, minced
  • 1 cup • bean sprouts
  • 1/2 cup • shredded carrots
  • 3 • green onions, chopped
  • 1/4 cup • chopped peanuts
  • • Fresh cilantro and lime wedges, for garnish
  • For the Sauce:
  • 3 tablespoons • fish sauce
  • 1 tablespoon • soy sauce
  • 2 tablespoons • tamarind paste
  • 1 tablespoon • brown sugar
  • 1 tablespoon • lime juice
Instructions
  1. Prepare Noodles: Soak the rice noodles in warm water for about 20 minutes, or until softened. Drain and set aside.
  2. Make Sauce: In a small bowl, whisk together the fish sauce, soy sauce, tamarind paste, brown sugar, and lime juice. Set aside.
  3. Cook Protein: In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the shrimp (or chicken/tofu) and cook until done. Remove from the skillet and set aside.
  4. Scramble Eggs: Add the remaining oil to the skillet and add the beaten eggs. Scramble until just set, then add garlic and cook until fragrant.
  5. Combine: Add the noodles, sauce, bean sprouts, carrots, green onions, and cooked shrimp (or chicken/tofu) to the skillet. Toss to combine and cook until heated through.
  6. Garnish and Serve: Serve hot, garnished with chopped peanuts, cilantro, and lime wedges.
