Ingredients
  • 1 cup • milk (240ml)
  • 3 tablespoons • butter (45g)
  • 1 tablespoon • sugar
  • 1 cup • warm water (110°F or 45°C) (240ml)
  • 2 1/4 teaspoons • active dry yeast (1 packet)
  • 4 1/2 cups • all-purpose flour (540g)
  • 1 teaspoon • salt
  • • Cornmeal, for dusting
Instructions
  1. 1. Heat the milk in a small saucepan until it starts to steam. Remove from heat and stir in the butter and sugar until melted. Let cool until lukewarm.
  2. 2. In a large bowl, combine the warm water and yeast. Let sit for 5-10 minutes until foamy.
  3. 3. Add the cooled milk mixture to the yeast mixture.
  4. 4. Gradually add the flour and salt, mixing until a soft dough forms.
  5. 5. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  6. 6. Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
  7. 7. Punch down the dough and roll it out to about 1/2 inch thick. Use a round cutter to cut out circles of dough.
  8. 8. Dust a baking sheet with cornmeal and place the dough circles on it. Cover and let rise for another 30 minutes.
  9. 9. Heat a griddle or skillet over medium-low heat. Cook the muffins for about 7-8 minutes on each side, or until golden brown and cooked through.
  10. 10. Allow the muffins to cool on a wire rack before splitting and toasting.
