  2. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Stir in the bell pepper, carrots, and zucchini. Cook for another 5 minutes.
  4. Add the diced tomatoes, crushed tomatoes, black beans, kidney beans, pinto beans, and vegetable broth. Stir to combine.
  5. Stir in the chili powder, cumin, smoked paprika, and oregano. Season with salt and pepper to taste.
  6. Bring the chili to a boil, then reduce the heat to low. Simmer for 30-40 minutes, stirring occasionally.
  7. Garnish with fresh cilantro before serving.
