Ingredients
  • 2 tablespoons • olive oil
  • 2 pounds • 2 stewing beef, cut into 1-inch cubes
  • • Salt and pepper to taste
  • 1 • onion, chopped
  • 2 cloves • garlic, minced
  • 4 cups • beef broth
  • 2 tablespoons • tomato paste
  • 1 tablespoon • Worcestershire sauce
  • 1 teaspoon • dried thyme
  • 4 • carrots, sliced
  • 4 • potatoes, peeled and cubed
  • 1 cup • frozen peas (optional)
  • • Chopped fresh parsley (for garnish)
Instructions
  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Season beef cubes with salt and pepper. Brown beef cubes in batches until deeply caramelized on all sides. Remove beef from pot and set aside.
  2. In the same pot, add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in beef broth, tomato paste, Worcestershire sauce, and dried thyme. Return browned beef cubes and any accumulated juices to the pot. Bring to a simmer.
  4. Cover the pot and simmer over low heat for 1.5 to 2 hours, stirring occasionally, until beef is tender.
  5. Add sliced carrots and cubed potatoes to the pot. Continue to simmer, uncovered, for another 30 minutes or until vegetables are tender and stew has thickened.
  6. If using, add frozen peas in the last 5 minutes of cooking.
  7. Taste and adjust seasoning with salt and pepper if needed.
  8. Serve hot, garnished with chopped fresh parsley. Enjoy the hearty and comforting beef stew!
