Ingredients
  • 2 tablespoons • olive oil
  • 1 • onion, chopped
  • 2 • carrots, diced
  • 2 • celery stalks, diced
  • 2 cloves • garlic, minced
  • 1 cup • dried brown or green lentils, rinsed
  • 6 cups • vegetable or chicken broth
  • 1 teaspoon • ground cumin
  • 1/2 teaspoon • smoked paprika
  • • Salt and pepper to taste
  • 1 • Juice of lemon
  • • Fresh parsley, chopped (for garnish)
Instructions
  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Cook until vegetables are softened, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in dried lentils, broth, ground cumin, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer, partially covered, for 30-40 minutes or until lentils are tender.
