Ingredients
- 2 • ribeye steaks (about 1 1/2 inches thick)
- 2 tablespoons • olive oil
- 2 cloves • garlic, minced
- 1 tablespoon • fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon • fresh thyme, chopped (or 1 teaspoon dried thyme)
- • Salt and freshly ground black pepper, to taste
- • Optional: compound butter for serving
Instructions
- Prepare the Steaks: Pat the steaks dry with paper towels. Rub both sides with olive oil, then rub with garlic, rosemary, and thyme. Season generously with salt and pepper.
- Preheat the Grill: Preheat your grill to high heat (about 450°F to 500°F / 230°C to 260°C).
- Grill the Steaks: Place the steaks on the grill and cook for about 4-5 minutes on the first side, without moving them, to get a good sear. Flip the steaks and continue grilling until they reach your desired doneness (135°F / 57°C for medium-rare, 145°F / 63°C for medium, etc.), about 3-5 minutes more. Use an instant-read thermometer to check the temperature.
- Rest and Serve: Remove the steaks from the grill and let them rest for 5 minutes before slicing. Serve with a slice of compound butter, if desired.
