Ingredients
  • 1 whole • chicken (4-5 pounds)
  • • Kosher salt and freshly ground black pepper
  • 1 lemon, • halved
  • 1 head • of garlic, halved crosswise
  • • A few sprigs of fresh thyme, rosemary, and sage
  • 2 tablespoons • melted butter or olive oil
Instructions
  1. Preheat Oven: Preheat the oven to 425°F (220°C).
  2. Prepare Chicken: Rinse the chicken inside and out, and pat it dry with paper towels. Season the cavity with salt and pepper, then stuff it with the lemon, garlic, and herbs.
  3. Season and Truss: Brush the outside of the chicken with melted butter or olive oil, and season with salt and pepper. Truss the chicken legs with kitchen string.
  4. Roast: Place the chicken breast-side up in a roasting pan or ovenproof skillet. Roast for about 1 1/2 hours, or until the juices run clear when you cut between the leg and thigh, and a meat thermometer inserted into the thickest part of the thigh reads 165°F (75°C).
  5. Rest and Serve: Let the chicken rest for 10-15 minutes before carving.
