Ingredients
  • 1 1/2 cups • dried chickpeas, soaked overnight and drained
  • 1 small • onion, chopped
  • 3 cloves • garlic, minced
  • 1/4 cup • fresh parsley, chopped
  • 1/4 cup • fresh cilantro, chopped
  • 1 tsp • ground cumin
  • 1 tsp • ground coriander
  • 1/2 tsp • ground cayenne pepper
  • 1 tsp • baking powder
  • 3 tbsp • all-purpose flour
  • • Salt and black pepper, to taste
  • • Vegetable oil, for frying
Instructions
  1. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, baking powder, flour, salt, and black pepper. Process until smooth.
  2. Shape the mixture into small patties or balls.
  3. Heat vegetable oil in a deep skillet or pot over medium-high heat. Fry the falafel in batches until golden brown, about 3-4 minutes per side.
  4. Drain on paper towels and serve with pita, salad, and tahini sauce.
