Activate Yeast:
In a small bowl, dissolve the yeast in warm water with 1 tablespoon of sugar. Let it sit for about 10 minutes until frothy.

Prepare Dough:
In a large bowl, combine flour, remaining sugar, and salt. Add the yeast mixture and cold milk. Mix until a dough forms.
Knead the dough on a floured surface until smooth. Shape into a ball, cover with plastic wrap, and refrigerate for at least 1 hour.

Laminate Dough:
Roll the chilled dough into a rectangle. Place the cold butter slices on half of the dough, fold the other half over the butter, and seal the edges.
Roll out the dough, fold into thirds, and chill for 30 minutes. Repeat this rolling and folding process three times.

Roll the dough into a large rectangle, cut into triangles, and roll each triangle into a crescent shape.
Place the croissants on a baking sheet, cover, and let rise until doubled in size, about 1-2 hours.
