1. Place the eggs in a single layer in a saucepan and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the saucepan and remove from heat. Let the eggs sit for 10-12 minutes.

2. Drain the hot water and transfer the eggs to a bowl of ice water to cool completely.

3. Peel the cooled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a bowl.

4. Mash the yolks with a fork. Add the mayonnaise, Dijon mustard, vinegar, paprika, salt, and pepper. Mix until smooth and creamy.
