  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  4. Stir in the ground coriander, ground cumin, garam masala, turmeric, and salt. Cook for another minute.
  5. Add the boiled potatoes and peas to the skillet. Mix well and cook for 5 minutes. Let the filling cool.
  6. Place a spring roll wrapper or samosa pastry sheet on a flat surface. Spoon a small amount of the filling onto the sheet and fold it into a triangle, sealing the edges with a little water.
  7. Heat oil for frying in a deep pan over medium heat. Fry the samosas in batches until golden brown and crispy, about 3-4 minutes per side.
  8. Drain on paper towels and serve hot.
