These Cauliflower Tacos are a delicious, plant-based alternative to traditional tacos. Crispy roasted cauliflower, seasoned to perfection, is paired with fresh toppings like avocado, tangy slaw, and zesty lime crema. Ingredients
  • 1 medium • head of cauliflower, cut into small florets
  • 2 tbsp • olive oil
  • 1 tsp • chili powder
  • 1/2 tsp • cumin
  • 1/2 tsp • paprika
  • • Salt and pepper to taste
  • • Tortillas, for serving
  • • Lime wedges, for serving
  • For the Slaw:
  • 2 cups • shredded cabbage
  • 1/2 cup • shredded carrots
  • 1/4 cup • chopped cilantro
  • 2 tbsp • lime juice
  • 1 tbsp • olive oil
  • • Salt and pepper to taste
  • For the Tangy Sauce:
  • 1/2 cup • plain Greek yogurt
  • 2 tbsp • lime juice
  • 1 tbsp • hot sauce
  • • Salt to taste
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, paprika, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 20-25 minutes, until tender and slightly crispy.
  4. In a medium bowl, combine the shredded cabbage, carrots, cilantro, lime juice, olive oil, salt, and pepper. Mix well.
  5. In a small bowl, whisk together the Greek yogurt, lime juice, hot sauce, and salt.
  6. Warm the tortillas according to package instructions.
  7. Fill each tortilla with roasted cauliflower, slaw, and a drizzle of the tangy sauce.
  8. Serve with lime wedges on the side.
