Ingredients
  • 3 tablespoons • unsalted butter
  • 2 • leeks, white and light green parts only, sliced
  • 3 cloves • garlic, minced
  • 4 cups • chicken or vegetable broth
  • 1 • bay leaf
  • 1 teaspoon • dried thyme
  • 2 pounds • potatoes, peeled and diced
  • • Salt and pepper to taste
  • 1 cup • heavy cream
  • • Chopped fresh chives (for garnish)
Instructions
  1. In a large pot or Dutch oven, melt butter over medium heat. Add sliced leeks and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in chicken or vegetable broth, bay leaf, dried thyme, diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
  4. Remove bay leaf from the pot.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  6. Stir in heavy cream and heat through without boiling.
  7. Taste and adjust seasoning if needed.
