Ingredients
  • 4 cups • vegetable broth
  • 2 tbsp • olive oil
  • 1 small • onion, finely chopped
  • 2 cloves • garlic, minced
  • 2 cups • mushrooms, sliced
  • 1 cup • Arborio rice
  • 1/2 cup • dry white wine
  • 1/2 cup • grated Parmesan cheese
  • 2 tbsp • butter
  • • Salt and pepper to taste
  • • Fresh parsley for garnish
Instructions
  1. Heat the vegetable broth in a saucepan and keep it warm over low heat.
  2. In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent, about 5 minutes.
  3. Add the mushrooms and cook until they are tender and any liquid has evaporated, about 5-7 minutes.
  4. Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
  5. Pour in the white wine and cook until it is mostly absorbed by the rice.
  6. Begin adding the warm broth, one ladle at a time, stirring frequently and allowing each addition to be absorbed before adding the next.
  7. Continue this process until the rice is creamy and cooked to al dente, about 18-20 minutes.
  8. Stir in the Parmesan cheese and butter. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.
