  • 4 large • eggs
  • 1 cup • grated Pecorino Romano cheese
  • 1/2 cup • grated Parmesan cheese
  • 8 oz • pancetta, diced
  • 3 cloves • garlic, minced
  • • Salt and black pepper, to taste
  • • Fresh parsley, chopped (optional)
Instructions
  1. Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. In a large bowl, whisk together the eggs, Pecorino Romano, and Parmesan cheese.
  3. In a large skillet, cook the pancetta over medium heat until crispy, about 6-8 minutes. Add the garlic and cook for 1 minute.
  4. Add the hot spaghetti to the skillet and toss to combine.
  5. Remove from heat and quickly pour the egg and cheese mixture over the pasta, tossing quickly to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.
  6. Season with salt and black pepper. Garnish with fresh parsley, if desired. Serve immediately.
