Ingredients
  • 4 slices • bacon, chopped
  • 1 • onion, chopped
  • 2 • celery stalks, chopped
  • 2 tablespoons • butter
  • 3 tablespoons • all-purpose flour
  • 2 cups • chicken broth
  • 2 cups • milk
  • 3 cups • diced potatoes
  • 2 cans • chopped clams, with juice (6.5 ounces each)
  • • Salt and pepper to taste
  • • Fresh parsley, chopped (for garnish)
Instructions
  1. In a large pot or Dutch oven, cook chopped bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate.
  2. In the same pot, add chopped onion, celery, and butter. Cook until vegetables are softened, about 5-7 minutes.
  3. Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
  4. Gradually add chicken broth and milk, stirring constantly to avoid lumps.
