Ingredients
  • 6 ripe • tomatoes, chopped
  • 1 • cucumber, peeled, seeded, and chopped
  • 1 • red bell pepper, seeded and chopped
  • 1 small • red onion, chopped
  • 2 cloves • garlic, minced
  • 4 cups • tomato juice
  • 1/4 cup • red wine vinegar
  • 1/4 cup • extra-virgin olive oil
  • 1 teaspoon • sugar
  • • Salt and pepper to taste

Instructions
  1. In a blender or food processor, combine chopped tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
