Cook the Pasta: Bring a large pot of salted water to a boil. Cook the orecchiette according to the package instructions until al dente. Drain, reserving 1 cup of pasta water.

Cook the Broccoli Rabe: In the same pot of boiling water, blanch the broccoli rabe for 2 minutes. Drain and set aside.

Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.

Combine and Serve: In the same skillet, add the garlic and red pepper flakes and cook until fragrant, about 1 minute. Add the blanched broccoli rabe and cooked sausage to the skillet and toss to combine. Add the cooked orecchiette and some of the reserved pasta water, and toss until well combined. Season with salt and pepper to taste. Serve with grated Parmesan cheese.
