Ingredients
  • 1 package • of pie crust (store-bought or homemade)
  • 4 large • eggs
  • 1 cup • heavy cream
  • 1 cup • shredded cheese (such as cheddar, Swiss, or gruyere)
  • 1 cup • fresh spinach, chopped
  • 4 slices • cooked bacon, crumbled
  • 1/4 cup • finely chopped onion
  • • Salt and pepper to taste
Instructions
  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. Roll out the pie crust on a lightly floured surface. Cut into circles large enough to fit into a mini muffin tin.
  3. 3. Press the dough circles into the mini muffin tin to form small crusts.
  4. 4. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
  5. 5. Divide the shredded cheese, spinach, bacon, and onion evenly among the prepared crusts.
  6. 6. Pour the egg mixture over the fillings, filling each mini quiche almost to the top.
  7. 7. Bake for 20-25 minutes, or until the quiches are set and lightly golden.
  8. 8. Allow the mini quiches to cool slightly before removing them from the tin. Serve warm or at room temperature.
