Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
